Pig & A Blanket: Weekend Hands-On Butchering Workshop & Farm to Table Cooking Class on the Maine Coast

Join Farmers Fare for a weekend of farm to table fun and fabulous feasting on the beautiful coast of Maine! January 28, 29 & 30, 2011
We’ll start the weekend with a Friday evening meet and greet over cocktails and hors d'oeuvres in the seaside village of Camden, Maine. Guests will meet one another and be introduced to their instructors, Master Butcher Steve Campbell and Chef & Author Nancy Harmon Jenkins. We will then enjoy a gourmet meal at the renowned Hartstone Inn (www.hartstoneinn.com) prepared by Owner/Chef Michael Salmon. A number of rooms have been reserved at the Hartstone Inn, an elegant B&B in downtown Camden, and are available to registrants on a first come, first-served basis, with additional accomodations available at a variety of local inns and B&B’s.
Following a delicious breakfast at your accommodation, we will begin the butcher class at Farmers Fare (www.farmersfare.com) on Saturday morning with a whole pig procured from one of our local farm partners. Master Butcher Steve Campbell will then teach us how to process a whole pig, and demonstrate what we can do with the various parts of the pig and provide some hints and tips for the novice butcher. We will break for a simple lunch of hearty pork-and-local-sauerkraut soup and skewered pinchitos (a pork-based tapa from the south of Spain) before returning to the classroom to complete the day’s session. Guests will be free to enjoy the culinary tastes of midcoast Maine on Saturday evening, with an array of exciting choices for dining out.
Sunday morning will kick off after breakfast with the much anticipated cooking class with writer Nancy Harmon Jenkins (www.nancyharmonjenkins.com), author of six cookbooks including her most recent, The New Mediterranean Diet Cookbook. Nancy’s work is regularly featured in Saveur Magazine as well as many other national and international magazines; she also lectures at Smithsonian, the Culinary Institute of America, Boston University’s Food Studies program and other venues. Together we’ll prepare a hearty winter lunch, using many of the products from yesterday’s butchering class, including a grand Tuscan pork stew, made to imitate wild boar, with a surprise ingredient in the sauce to be served over polenta; also a French country cook’s favorite terrine de campagne, along with fegatelli, greens to accompany the pork, and an old-fashioned Maine apple pie with a lardy crust.
To end the weekend, we’ll relax over the fruits of our labors, with a pork feast accompanied by paired wines chosen specifically to complement the various dishes. Participants will receive their very own “market basket” stocked with a variety of pork cuts, butcher supplies and select merchandise to take home with them!

This Little Piggy Went to Market: Pig Butchering Workshop & Pork Feast

Join Farmers Fare for an evening of farm to table fun with Master Butcher Steve Campbell as we learn how to butcher a pig and then celebrate our efforts by sitting down to a delicious four-course, candlelit feast featuring an array of pork preparations and delicious wine pairings.
We’ll start the evening with a whole pig procured from one of our local farm partners. Steve will then teach us how to process a whole pig, and show us what we can do with the various parts of the pig and provide some hints and tips for the novice butcher. We will then sit down to a pork feast prepared by one of our local chefs who will take us on a culinary tour of pork heaven! This delicious meal will be paired with wines selected specifically for their ability to complement the flavors of pork dishes. We will finish the dinner with a unique pork-themed dessert and participants will receive their very own “market basket” stocked with a variety of pork cuts and select merchandise to take home with them! (Space in the class is limited to be sure to sign up early!)

As we prepare to begin a new year, we’d like to let you know about some exciting changes happening here at Farmers Fare. As we enter our second winter since opening in September 2009, we have decided to return to our roots and turn our attention once again to the mission and ideas that have served as our inspiration in crafting this unique business. This year, we will be utilizing the winter months to focus on events and programs that foster community and promote educational programming, and will re-emerge in full bloom to greet the first signs of spring.
Beginning January 2, the retail market and cafe will enter into a dormant period and close for the winter, joyfully re-opening in the spring. This change will allow us to focus on the exciting events and programs we are planning for 2011 which will include classes and workshops, online retail sales and facility rentals for special events and community use.
Our butcher shop will continue to operate throughout the winter for our wholesale customers, and we will happily make arrangements for special orders for our retail customers. Be sure to check out our website and Facebook page for news and updates about our family meat packages, streamlined ordering process and upcoming butcher classes and demonstrations.
During this time, we are excited to make our beautiful facility and catering available for special events and parties, including weddings and wedding receptions, meetings, galas, children’s parties, educational events and fundraisers. In addition, our large commercial kitchen space will be offered to our farm partners, chefs and local artisans that require a space in which they can create their own special recipes.
Please note that our offices will be closed for vacation beginning January 2, 2011 and we will be back in full swing on January 10th. Did you know that we have pure, delicious and untreated/unfiltered water flowing freely right here on the Farmers Fare property?!
After an unsettling article about harmful contaminants in local wells surfaced this week, everyone seems to be talking about the quality of their drinking water and what to do about the reported widespread arsenic contamination in wells throughout Maine. The on-site aquifer here at Farmers Fare was discovered by accident while the barn that houses our market, café and butcher shop was being built. Out of curiosity, we took a few sips- and it tasted great! No one got sick, so we had the water tested and found that it was totally free of bacteria and contaminants- so pure that it requires no filtering at all! We became licensed by the state to allow us to offer this water at Farmers Fare, and to maintain the safety of the water, it is tested by Aqua Maine, Inc. each month- the same testing that the local water supply goes through. The numbers are staggering, this water is about as pure as it gets! (In fact, we’ve just gotten our most recent report in, and we’ll be posting it here shortly for all to see!)
Since this discovery was a complete surprise, we considered it a “gift” and wanted to share this gift with the community by offering the water free in the café. In true Farmers Fare fashion, our water dispensers are adorned with colorful labeling and placed throughout the market and café for enjoyment by all. Our water doesn’t contain any nasty contaminants or bacteria and contains only fresh, clean water- and 100% real joy!

Kitchen Rental:
We have a very large, state of the art commercial kitchen that is available for rental after business hours for caterers and producers of local food products during this upcoming holiday season and any other time of the year.
Room Rental:
We have a downstairs dining room that can be rented by the hour for business meetings, private birthday parties or corporate training events. We can price the rental to include coffee and water and/or meals.
Private Parties:
We can cater your private dinner party in the stunning evening setting of Farmers Fare! It a sight to behold. The private dinner party pricing can include but is not limited to appetizers, specific meal requests, wine service, buffet and/or a wait staff. This includes rehearsal dinners.
